Sharks spawn randomly in deep water. Go out on the ocean (preferrably with a boat or Jet Ski) and watch your mini-map until it turns all dark blue. Keep navigating the boat or swim around. After a while you should see a red dot on your radar. That's the shark! Jump into the water and wait until it kills you. That may take some while, the shark doesn't spot you right away. It doesn't matter whether you stay still, swim around or dive. Once the shark kills you, the trophy / achievement will unlock. So I got the game on PC (rocking a 2GB GTX 770 and i5 4670k) and one issue that was clear with the graphics right away was the incredibly severe pop-in that would cause entire buildings and streets to disappear similar to a worse version of the HDD streaming issues on the last gen consoles. At first I thought it was a VRAM issue, however whether it was on min or max settings made no difference. After a day of searching and testing though I have found that setting the CPU priority of GTA V to high in task manager completely eliminates all of the extreme pop-in/streaming issues. From what I saw the issue is pretty rare but I know how much of a pain in the ass it is, so hopefully those who need it see this.
